Interesting.I wonder how Quince sounds as a tone wood. It looks to have a pretty tight grain.

How does Quince taste when it's made into an alcoholic beverage?
Quince is very astringent; it tastes citrusy, but gentler and without the sharpness of a lime or lemon; it also has floral undertones of rose and pineapple. I amped the citrus up with the fresh lemon peel; the the cardamom added some warmth, and the "fennel pollen has notes of licorice, citrus, and homemade marshmallows." I'm quite happy with how it came out! I have two other batches, with different spices, that I have yet to process.
Have you plans on how you'll be deploying this decadent sounding infusion?
Later this week, I am sharing it with a friend around a fire pit. Belatedly we will release 2023, and welcome our individual intentions for 2024.
